Yes, it’s that time of year again! The flavor that screams fall and seems to be
everywhere…Pumpkin Spice!
From pumpkin spice lattes to even our favorite snack food,
tortilla chips, is jumping on the pumpkin wagon! That’s right; I had a little sample at the grocery
store of some pumpkin spice tortilla chips and, actually, they weren’t bad.
Other fall favorites are chili creations, soups and
pot roast. Which brings me to this
creation that I pulled together to use that leftover roast beef sitting in the fridge that you don’t know what to do with.
Maybe you’re tired of that cold and blah-zay leftover roast beef
sandwich, so instead the leftovers sit in a plastic container somewhere in the
abyss of your fridge.
Well, it’s time to carve out a new smashing idea that combines roast
beef and pumpkin spice English muffins.
Wake up and smell the pumpkin!
Just try this AWESOME and fall
inspired sammie!
Serves One
Ingredients:
1 Pumpkin Spice English muffin (I used Thomas brand)
½-1 cup Leftover cooked roast beef (slightly warmed up) – I put in
microwave for a minute
1 slice provolone or Swiss cheese
Honey mustard
¼ cup thinly sliced apple
Dry Pumpkin Spice or Cinnamon
Mixed greens (optional)
Preparation:
Split English muffin in half and spread honey mustard on each half. Place warmed shredded roast beef on each half of muffin. Cut slice of cheese in half and place on top of each roast beef half. Set two halves on a baking pan and put in toaster oven or regular oven at 400 degrees. Toast until cheese is melted and muffin is slightly toasted.
Remove from oven, put apple slices on one half and sprinkle with pumpkin spices. Add some mixed greens (optional) then top with the other roast beef half and smash it all together to make a pretty unforgettable Smashing Sandwich!
This meaty combination of sweet, tangy and crunchy on a warm pumpkin English muffin certainly entices for an incredible taste of fall.
I think Pumpkin Spice is here to stay, so why not enjoy and
get creative. Heck, throw some pumpkin
spice tortilla chips on the side with this sandwich if you dare!
