I couldn't let October (Pumtober) end without another pumpkin recipe. This baked pumpkin oatmeal is great for one person or if you're in the sharing mood, there's enough for two.
It's easy to whip this together, pop in the oven and bake for 20 minutes. It makes for a great fall morning breakfast.
Start with these ingredients.
Bake at 400 degrees for 20 minutes.
That's it! Remove from oven and let cool for 5 minutes. Then grab a spoon or two (if you decided to share) and dig in!
Personally, I love the crunch pecan topping! It's like eating the
crunchiness of a muffin top.
