Grilled Chicken on Ciabatta Roll

I had some leftover grilled chicken in the fridge, which is perfect to make a quick toasted open face sandwich for lunch.  I just split a mini ciabatta roll in half, or you could use French bread or an English muffin.  Lightly spread on some butter or coconut oil on the bread and a little shake of garlic powder.

Place the bread on a baking sheet and put in the toaster oven or regular oven at 400 degrees. Bake until lightly toasted.  Remove from oven and put on a dollop of marinara sauce on each half, place 2-3 chicken slices on sauce and then sprinkle some mozzarella cheese on top.  Put back in oven and bake until cheese is bubbly and lightly browned.

Lunch is ready.  Quick, easy and tasty!
