Happy Cinco de Mayo!
Try this simple an easy open-face sandwich with a little Mexican flair to celebrate the day.
I'm using a 100 calorie thin bun and Amy's Organic Refried Beans.
Lightly toast the thin bun in the toaster oven. Then spread on the refried beans and a tablespoon of shredded cheddar cheese. Pop back in the toaster oven until the cheese melts.
Add sliced avocado and sprinkling of Mrs. Dash Extra Spicy seasoning.
Top with a little more cheese and sliced grape tomatoes.
1 whole wheat thin bun
1/4 cup refried beans
2-3 Tbsp shredded cheddar cheese (divided)
1/2 avocado sliced
