I've Fallen and, That's Right...I Did Get Up!

Most of us have experienced that unexpected slip and fall moment at some point in our lifetime. 

You feel embarrassed. You feel clumsy. You feel ridiculous. 

As long as no one is hurt, it can be an amusing blooper.

Our winters here in Minnesota can cause an upswing of slip and falls!  Between snow and ice, we've learned to do the shuffle walk, skate walk, penguin walk and the slow mo step and glide walk.

Then just when you think you feel pretty solid on two feet, you're slipped up, tripped up or flipped up!  

Sometimes it's a complete mystery that you find yourself spread-eagle with feet flying northward and your rear-end in a dicey direction.

Sweet Potato and Black Bean Breakfast Quesadilla

I made baked sweet potatoes to go with dinner and ended up with one leftover. So, I tossed it in the fridge and figured I'd use it for something later on. 

DON'T toss in the garbage or give to the dog!  Well, if you really want to give it to the dog, I guess your pup will love ya for it.  

I decided to use my leftover sweet potato to make breakfast quesadillas. Quesadillas are so versatile and you can put just about anything between two tortillas.  

This is a wonderful breakfast start and the sweet potato and black beans have great protein and health benefits to make it a healthy breakfast.

Dancing With Bobby and Cissy

Before Dancing With The Stars, there was Bobby and Cissy!  You're thinking, Bobby and Cissy...Who?

As a kid growing up in the 70's, a familiar occurrence was the The Lawrence Welk Show. It was a popular show in its time and, generally, watched among the more maturely aged demographic. The Lawrence Welk show entertained with mostly music from the Big Band era and some good old fashioned Polka music. 



Needless to say, when at grandma's house, this is what was on the boob tube. We would watch Bobby and Cissy, the featured performers, dancing perfectly together as they mesmerized their audience. I loved watching them. Just like DWTS, they made it look so easy and graceful.

Hansel and Dental

For years I've taken the kids to their dental check-ups in a dual appointment structure. Knock off two check-ups in one visit. 

This appointment wasn't any different than the others except Loo (my daughter) noticed and mentioned that Kid Nao (my son) always seems to be greeted and called back to his check-up first. 

I never noticed this in the years past, but I'm sure since she’s the older sister, she had a more heightened awareness of this bias. 

She also noticed and commented that his hygienist was cute. Admittedly, I said "they're all cute and pretty here." It's actually true. In fact, everyone is extremely nice and they all have gorgeous smiles with perfectly straight white teeth. Of course, why wouldn't they? They're all walking billboards for their profession. 

Duh, who'd want a dentist or hygienist with yellowed and missing teeth?




Loo laughed and joked, wouldn't it be funny if out of all the cute ones, she might get the snarled tooth crony witch hygienist for HER check-up. 

With a chuckle, I started picturing all the classic witches from the fairy tale stories. I conjured up, in particular, the witch from Hansel and Gretel luring her victims with cookies and candy. She'd come out with a plate of gigantic M&M cookies and beautifully sprinkled decorated cupcakes and piles of candy. 

Seems to be perfect bait at a dental office, don't you think?

Baked Oatmeal With Raspberries and Almonds

Isn't it great to have the smell of something wonderful baking on a weekend morning!  

This baked oatmeal is simple to put together and can be served as an addition to a Sunday morning brunch or just simply scoop in a bowl and enjoy with your coffee.

The leftovers are terrific for re-heating during the week too!




Ingredients:
2 cups old fashioned rolled oats
1/4 cup brown sugar
1 tsp baking powder
1 tsp cinnamon 
1 cup raspberries - divided (I used frozen)
1/4 cup slivered almonds (used for topping)
2 cups Unsweetened Vanilla Almond Milk
  (Or use regular milk)
1 egg
3 Tbsp canola oil or coconut oil (melted)
1 tsp vanilla extract

Preparation:
Preheat oven to 375 degrees and spray inside of an 8 or 9 inch square baking dish with cooking spray. In a mixing bowl, mix together oats, sugar, baking powder, cinnamon, and 1/2 of raspberries.  Spread mixture evenly in baking dish. 

In same bowl, whisk together the milk, egg, oil and vanilla extract. 

Arrange the remaining 1/2 of raspberries on top along with the slivered almonds. Pour the milk mixture over all. 

Bake 35 to 40 minutes until the top is golden brown and the milk mixture has set. 

You can serve just as is or put a spoonful of yogurt on top. If you prefer less sugar, you can reduce the amount of brown sugar. 

This is a wholesome and filling breakfast. Love, love the raspberries, but you can switch it out with strawberries, blueberries or bananas.

Mama Needs A New Pair Of Shoes, Or...A Tattoo?

I’m beginning to feel, that possibly, I'm part of a smaller group of people that does NOT have a tattoo!  I’ve considered it, but there’s so much to ponder before getting your first tattoo.   Decisiveness is not my strong suit.  New shoes? Tattoo? New shoes? Tattoo?




“Hey, Mom, if you’re reading this…I probably won’t (might) get a tattoo!” 

Like my mother really gives a crappola at this point!  I’m 50 years old for God sakes!!! 

Knowing my mom, she probably has one discretely in a place that even I don’t know about!!  Maybe she has my name scrolled inside a heart-shape and strategically placed above her heart!  Or, maybe it’s a skull and bones with my name under it.  Fess up, Mom!!

Turkey Melt with Bacon and Baby Bellas

For The Love Of Bacon! Try this open face sandwich melt for a tasty lunch. 

Single Serving

Ingredients:
1 Mini Ciabatta Roll or English Muffin
1-2 Slices Deli Turkey
1 Baby Bella Mushroom (sliced)
1-2 Slices Bacon
1 Slice 2% Provolone Cheese 

Preparation:
Split mini ciabatta roll in half and toast lightly in a toaster oven or regular oven at 400 degrees. Once lightly toasted remove and then place deli turkey slices on each roll half, sliced mushroom, 1 or 2 slices of bacon and slice of provolone cheese on each half of roll. Place in toaster oven again for about 5 min. to heat and melt cheese.

Yummy, gooey, crunchy, smokey bacon delicious!!

Graham Crackers and Nutella Snack

You want a quick snack, simple dessert or just having a Nutella craving and need to satisfy that chocolate fix!  

Four simple ingredients:
  1. 1 Graham Cracker sheet
  2. 1-2 Tbsp Nutella
  3. 1 Tbsp Chopped Almonds
  4. 1 Tbsp Craisins (dried cranberries)

Unlocking The Secrets Of Women!

The play production of "Girls Only" on this particular theatre night out in Minneapolis had unexpected surprises and some exciting connections that went far beyond just a regular “Girl’s Night Out.” 





For me, it was a RELATABLE woman connection, a HUMOROUS connection and a PERSONAL connection. 

When settling into our seats at this play, it became very apparent that if you didn't own a pair of BOOBIES and a HOO HA, you were in the minority. 

The whole audience consisted of women and, maybe, five guys.

The play, after all, was called "Girls Only - The Secret Comedy of Women!” Click on the title link for more information to this fantastic show. 

When first walking in, I knew this wasn't going to be any ordinary play. Only two women made up the cast.  There wasn’t a fancy grand entrance to start the show. In fact, these two women were already visibly on stage before the show even started, in character and in costume, which consisted of only their bra and underwear.
